How to cook Meat and potatoes(肉じゃがの作り方)

Ingredients for two servings(2人前の材料)

  • 100 glams scraps of beef or pork(牛こまor豚こま肉:100g)
  • 2 potatoes(じゃがいも:2個)
  • 1/2 onion(玉ねぎ:1/2個)
  • 1/2 carrot(にんじん:1/2個)
  • some kidney beans(いんげん:適量)
  • 1and1/2 cups water(水:1と1/2カップ)
  • 2 tablespoons cooking sake(料理酒:大さじ2)
  • 1 teaspoons granulated broth(顆粒だし:小さじ1)
  • 1 tablespoons sugar(砂糖:大さじ1)
  • 1 tablespoons mirin/sweet sake(みりん:大さじ1)
  • 2 tablespoons soy sauce(醤油:大さじ2)
  • some vegetable oil(サラダ油:適量)

1. How to cut vegetables(野菜の切り方)

Cut the potatoes into six pieces.

Cut the onion into wedges.

Cut the carrot into 1-2 cm lengths’ quarter-rounds.

Cut the kidney beans into 3 cm lengths.

2. How to saute(炒め方)

Heat the pan over a medium heat and add oil to the pan.

Put the meat to the pan and saute.

When the meat gets brown, add the potatoes, onion and carrot and saute them.

Add kidney beans, water, cooking sake and granulated broth.

When it is boiled, skim off the scum from the pan.

Cover and simmer on low heat them for about 10 minutes.

Add sugar and mirin and simmer on low heat them for about 5 minutes.

Add soy sauce and simmer uncovered on low heat them for about 5 minutes.

Stirring until the liquid evaporates.

When almost all the liquid is gone, it’s ready to eat!

Tips on how to cook(作り方のコツ)

  • Cut the potatoes a little bigger than the others because they are easy to melt.(じゃがいもは溶けやすいのでやや大きめに切る)
  • If you use boiled kidney beans, you add them after simmer.(茹でられたいんげん使用する場合は煮込み終わった後に追加する)
